Ham and Cheese Egg Bites

Ingredients:

  • 8 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced ham
  • 1/4 cup chopped broccoli (optional)
  • 1/4 cup cottage cheese
  • 2 tablespoons chopped fresh chives (optional)
  • Salt and pepper to taste
  • Cooking spray or melted butter for greasing the molds

Instructions:

Step 1: Preheat the oven and prepare the molds
Preheat your oven to 375°F (190°C). Use a silicone egg bite mold or grease a muffin tin with cooking spray or melted butter. This will ensure the egg bites don't stick to the mold.

Step 2: Prepare the egg mixture
In a mixing bowl, crack the eggs and whisk them until well beaten. Add the cottage cheese, cheddar cheese, diced ham, chopped broccoli and chopped chives (if using), salt, and pepper. Stir everything together until the ingredients are evenly distributed.

Step 3: Fill the molds
Carefully pour the egg mixture into each mold, filling them about 3/4 full. Be sure to leave some room for the egg bites to rise while baking. Also try to ensure that the additions to the egg: the ham, bacon, cheese, etc are equally distributed

Step 4: Bake the egg bites
Place the mold on a baking sheet and transfer it to the preheated oven. Bake for approximately 15-20 minutes or until the egg bites are set and slightly golden on top. To check if they are done, insert a toothpick into the center of one bite. If it comes out clean, they are ready.

Step 5: Let them cool and remove from the mold
Once baked, remove the egg bites from the oven and let them cool for a few minutes. Gently remove them from the mold by pushing up from the bottom or using a small spoon to release the edges. They should easily pop out.

Step 6: Serve and enjoy!
Serve the Ham and Cheese Egg Bites while still warm. They are delicious on their own, but you can also pair them with a side of fresh salad or some toasted bread.
